This dessert is made with young cucumbers, lime, mint and sugar. For one kilogram of small vegetables, you will need 600 grams of sugar, one lime, 40 grams of fresh sprigs.
The cucumbers need to be cut into large cubes, then they need to be covered with sugar and left until there is enough juice. Peel off all the zest from the lime and squeeze out the juice. After the cucumbers have been juiced, boil them for 15 minutes. Then add mint, juice and lime zest to the mixture. The jam is brought to a boil and boiled for another 10 minutes over low heat. Then it is removed from the fire and cooled. This procedure should be repeated 2 times.
After that, they take out the mint from the jam and put it in the jars. You can add ginger, cloves, vanilla or cinnamon to the treat.
To prepare this delicacy, you will need seven small onions, vegetable oil for frying, 300-400 grams of sugar, two tablespoons of wine vinegar, dry thyme and two glasses of wine. The choice of red or white wine depends on the color of the bulbs.
Fry the onion cut into half rings, then add sugar and continue frying until carmelization. After that, pour wine into a container with onions, bite, add thyme to taste. Simmer the resulting mixture until the liquid evaporates. If desired, you can put bay leaves and a little pepper in the jam. We put the hot jam in jars and close the lids.
