Thermomix ice cream and sorbet, instructions for use
Fruit sorbets
With the Thermomix, sorbets are obtained with a significantly higher fruit content than sorbets found in the market.
For the preparation, just cut 600 g of fruit, peeled if necessary, cut into pieces and placed on a baking sheet covered with baking paper that is placed in the freezer for several hours. You can also use frozen fruits like blueberries or raspberries to save time. The only exception is the apple and pear, which must be cooked beforehand. The fruits are then allowed to thaw for 5 to 10 minutes before placing them in the bowl of the Thermomix. The fruits are mixed 5 s at speed 10 to spray them, we add 1 egg white and 50 g icing sugar, then we mix again 30 s at speed 5. The whisk is placed in the bowl and mixed 1 min at speed 4 to brew the sorbet.
It is also possible to replace sugar and egg white with fresh fruit. Just spray 300g of frozen fruit with the same amount of fresh fruit before continuing with the rest of the recipe. In terms of taste, everything is possible, and you can have fun mixing flavors: strawberry-banana, raspberries-blackcurrant, pineapple-mango …
Home made ice cream
To make ice cream with the Thermomix, it’s almost the same principle as for sorbet. We pour into the bowl 6 egg yolks with 5 cl of milk and 80 g of brown sugar. Heat 6 min at 80 ° C / speed 3, add 75 cl of liquid cream and mix for 5 s / speed 5. Leave to cool and pour the preparation into one or more ice cube molds which are placed in the oven. freezer for several hours.
Then, as for the sorbet, we mix with the knife utensil, then we stir the ice cubes with the whisk before tasting immediately!
You can also have fun making salted ice cream with goat’s milk, basil, foie gras… to add an original touch to your meal!
Magic banana ice cream
The banana makes it easy to make ice creams and sorbets, without dairy products, also called nice cream. Just mix very ripe bananas, cut into pieces and frozen, for 5 s / speed 10, then add toppings (chocolate chips, red fruits, maple syrup, coffee, peanut butter). In addition, this recipe is a good anti-gastillage tip, because it avoids throwing in overripe bananas.
Light yogurt ice cream
To make a yogurt ice cream, nothing more simple, just pour 400 g of plain yogurt, 80 g of sugar, 10 cl of fresh cream and a little vanilla extract in the bowl of Thermomix, mix 10 s / speed 7. Pour the preparation into an ice cube tray and go to the freezer for about ten hours. Then place the ice cubes in the bowl and mix for 1 min / speed 6. To give a little smoothness, place the whisk and mix for 5 s. And we do not hesitate to add some fresh fruit topping or a little coulis when serving.
Some mistakes not to make
If we add alcohol to our ice cream like Chartreuse liqueur or Limoncello, we add it at the last moment, and we barely mix the preparation. Indeed, if it is integrated from the start, alcohol prevents complete freezing.
Working the ice and sorbet in this way with Thermomix (freezing then stirring) makes it possible to obtain a very creamy material because, the temperature of the freezer, especially if it is too cold, makes the ice very hard.
