In the end, the researchers found a way to combine taste and health by creating milk chocolate with peanut peels.
When processing peanuts, most often their red skin is not used, and in fact it contains 15% of phenolic compounds, which are a source of antioxidants.
And peanut skins aren’t the only food scraps that can improve chocolate, experts say.
They are now studying phenolic compounds from used coffee grounds and tea leaves.
