Kaluga dough has officially become the main dessert of the New Year’s capital of Russia-2021. This was announced on Thursday, November 5 by the Tourism Development Agency of the Kaluga Region.
“An abundance of Kaluga dough awaits Kaluga residents and guests of the New Year’s capital of Russia-2021 at the gastronomic festival, which is scheduled to open on December 27 at Teatralnaya Square in Kaluga,” the agency said.
Kaluga dough was an extremely popular delicacy in Russia in the 18th – 19th centuries. Its taste cannot be compared with any of the familiar desserts – it is the tart taste of rye rusks combined with honey sweetness and spices – ginger and cinnamon.
The history of the dessert is unknown. The old gastronomic recipe for its preparation was revived not so long ago. It is based on the cooking process described in the 1920s in one of Ivan Somov’s cookbooks.

Festive events will take place in Kaluga from December 12 to January 9. Kaluga received from Ryazan at the beginning of the year a badge of honor – a crystal snowflake. In Kaluga on January 9, 2021, at the closing ceremony of the holiday, a snowflake will be handed over to Nizhny Novgorod.
