Poplar buds are also rich in vitamin C and resins, which are very useful for the body. He noted that the kidneys can be used to make spring snacks, added to bread and garnishes. For example, fry birch buds in butter with buckwheat and porcini mushrooms. But such dishes should not be overused.
“It is advisable to eat buds in moderation: any medicinal plant is harmful in large quantities. If the buds are overgrown, it is best to soak them in hot water for 15-20 minutes so that excess tar and bitterness are gone,” the expert added.
He also noted that the kidneys should be collected away from cities and not near roads.
According to the chef, in the spring you can also eat clover flowers, cattail and medium starfish.
