MARRAKECH CHICKEN and LENTILS
* 1tbsp. 100% Virgin Coconut oil
* 4 skinless chicken breasts cut into pieces
* 6 oz wholemeal flour
* 8 oz brown lentils, rinsed and picked over
* 1 bunch of spring onions chopped
* 12 whole dried Apricots (3 oz. ), quartered
* 5oz golden raisins
* 2oz fresh parsley, chopped
* 1/2 tsp. Fresh ginger, chopped
* 1/2 tsp. Salt, or to your taste
* 1/4 tsp. * 1/4 tsp.
120ml water with one teaspoon vegetable Bouillon powder added.
Turn the oven on to 350°F. In a large frying pan, heat the coconut oil. Add the chicken pieces to the oil and coat with flour. Cook the chicken pieces in the coconut oil for 5 minutes. Place on a plate. To the frying pan, add lentils, spring onions, and apricots, as well as raisins, parsley, ginger, and salt. Stir for one minute. Transfer to an ovenproof dish. Place the chicken on top. Cover with water and bake in the oven. Bake for 30 minutes, then uncover the range and bake another 20 minutes or until the chicken and lentils are tender.
